With summer already here, there’s nothing quite like cooling down with a nice ice cream.

This healthy vanilla ice cream is made with only 4 ingredients.
- 3 ⅓ cups of full fat coconut milk
- ½ of unsweetened of coconut milk
- ⅓ of pure maple syrup
- 2 tbsp of pure vanilla extract
Step One – Mix All The Ingredients Together
Combine all the ingredients in a bowl and stir until they are thoroughly combined.
Step Two – Add To A Ziploc Bag & Freeze
When the mixture has been well mixed, you will need to add it to a ziploc bag. Add the ice cream to the freezer and allow it to freeze for a minimum of 3 hours.
Step Three – Add The Ice Cream To A Food Processor
Once 3 hours have passed, you will need to add the ice cream to a food processor. Blend until smooth.
Step Four – Freeze Again
Once the ice cream mixture is smooth, you will need to add it to a freezer-safe container. Add it to the freezer again to freeze for an additional 3 to 4 hours.
Step Five – Serve & Enjoy
Use an ice cream scoop to serve. Tuck in and enjoy!

- 4 large bananas, very ripe
- 1 lb / 450 g of fresh strawberries, ripe
Step One – Prepare The Fruit
To begin, you will need to prepare the fruit. Start off by peeling the bananas and chopping them into slices.
Following this, you will need to hull and slice the strawberries.
Step Two – Line A Baking Tray
Next, you will need to line a baking tray with parchment paper before arranging the fruits on top so that they are ready to be frozen.
Step Three – Place The Fruit In The Freezer
Once you’ve arranged your fruit, you’ll need to pop them into the freezer for 2 hours or until they’re frozen completely.
Step Four – Add Them To A Food Processor
Chuck your fruits into a food processor and blend until the mixture is creamy and smooth.
Be careful to scrapie down the edges of the bowl as needed, as you don’t want to be left with grainy ice cream.
Step Five – Serve Immediately Or Refreeze
At this point you have a choice. You can either eat the ice cream immediately if you like the soft-serve consistency, or you can refreeze it.
If you want it to be a bit harder, refreeze it for another 3 to 4 hours in a freezer-safe container.
