Fresh fruit, cookie dough like maple and cinnamon oats with creamy vanilla yogurt makes this parfait a simple make ahead, no brainer breakfast!
Say hello to my breakfast everyday while on my honeymoon.
I would love to tell you I was oh so adventures and went down the menu and checked every item off, but I am creature of habit with my breakfast. Boring I know.
But who wants to spend a billion minutes trying to decide what to fix for breakfast? I usually rise before the sun and my stomach is roaring. So I have very few minutes to decide, hence my go to of the usual oats, blueberries and peanut butter. We are good friends; we know what works.
So on my first morning in paradise, I laid eyes on the fresh fruit and yogurt parfait. Sounds so simple but simple is what gets me going in the morning. Little disclaimer here…the portion sizes on our honeymoon were ‘small’ to American standards, so you know more along of the lines of what normal human beings are supposed to eat. It was refreshing! I mean, after a few dishes each meal, we left satisfied. But hey, we got a lil bit of this, lil bit of that and we loved every bite.
So back to this yogurt parfait. The fruit was freshly cut and varied each morning; from pineapple, papaya, apples, and mangos along with sprinkles of fresh coconut. Oh. my. heavens. It was goooood. But not quite as good as the cinnamon, soft, mapled oats. Regular, uncooked oats were mixed into a caramel-like concoction that I secretly wanted to ask for a whole bowl of. The oats soften as it sits with the maple, and the cinnamon provide warmth and spice. It quite possibly be considered a three ingredient cookie dough…
The chilled, creamy yogurt; sweet, tart fruit all finished off with golden, maple oats is so simple to make, tastes wonderful the next day and is a no brainer breakfast!
While I can’t wake up everything morning with the view of the ocean and palm trees, I can enjoy a sweet parfait that takes me back every time!
- 1 cup vanilla (or plain) greek yogurt
- ½ cup fresh blueberries
- ½ cup fresh raspberries
- ½ cup strawberries, sliced
- 2 Tbsp old fashioned oats
- 1½ Tbsp maple syrup
- ⅛ tsp cinnamon
- In a small bowl or ramekin, mix oats, maple and cinnamon. Set aside.
- In your serving dish, layer greek yogurt and berries. Then top with cinnamon oats and serve!
